My mother in law was renting a room to some guy she didn't get information from. He has been gone for over 30 days. By law can someone tell me how the proper way to kick him out and remove his stuff.

If he had been paying rent and she has nothing written, then he's classified as a month-to-month tenant in most states. Talk to a lawyer about doing an eviction due to non-payment and have her explain the situation in detail. If the guy isn't there for the court date, she wins by default and can go through the process of removing his garbage from her property after storing it for a legal amount of time.
