We have a tenant who has a rental contract stipulating only single occupancy but would like have a second person move in to share the rental.  The current contract is month-to-month and we would need to sign a new contract.  The unit is intended for only one person.  To give both the tenant and ourselves a fair trial period of having this additional person living in the unit we would like to convert to a six month lease and also raise the rent.  Current rent is $1215/mo and does not include utilities.  What are your experiences with going from month-to-month to a lease and thoughts on a fair rent increase?  Thank you for any advice.

Why would you want to make it six months? Keep it month-to-month so that if the new person is a problem you can end the lease at any time. You can also increase the rent since you are creating a new lease in order to add the new tenant.

What do you mean the unit is "intended" for only one person? It's a one-bedroom? It's just a room in your house? It's so small it can only legally house one person? What?

What are comparable units renting for in your area?

 Check out the new tenant .If they don't qualify  say "no". I would keep it month to month weather  you accept the added person or not.
